The Best Sourdough Eggs Benedict Skillet Recipe

This skillet recipe combines long fermented grains, pastured eggs, and bacon to create a savory dish to feed the whole family. Top it with homemade hollandaise sauce and you have the best breakfast casserole, all in the convenience of a Cast Iron skillet!

If there is one meal I know how to do best, it is making killer breakfast dishes. I can count on one hand the amount of times my family has gone without a hot, homemade meal for breakfast. It’s an understatement to say that breakfast is my favorite meal of the day. My husband on the other hand, not as much. However, he does love a good savory breakfast dish. So, I figured why not re-create his favorite dish? I’m certain it will get him more excited for breakfast time.

It has been on my mind, for a while now, to create a healthier version of eggs benedict that can be made more simply and in a larger quantity. The reason for this is because our family is growing. I have 3 boys to feed and I am all about ways to make something delicious stretch for more meals. I believe this recipe does just that!

What is Sourdough?

In our home we love to long ferment our grains whenever possible. The flavor profile that Sourdough gives to any dish is so tangy, complex, and delicious. Using natural yeast in the air to rise your bread is what is called “Sourdough.” The process of beginning a Sourdough starter to use in recipes takes about a week. After that, you can use the starter for years, even pass it down as a family heirloom!

Supplies you will need

  • 14 inch Cast Iron skillet
  • Knife
  • Cutting board
  • Spatula
  • Shallow dish
  • 2 Medium sized bowls
  • Whisk
  • Tea towel
  • Wooden spoon
  • Medium Stainless steel sauce pan, or double boiler

Einkorn Sourdough English Muffins ingredient list

  • 2 1/4 Cup All Purpose Einkorn flour (+more to roll the dough in)
  • 3/4 Cup filtered water
  • 1/2 Cup of fed Sourdough starter
  • 1 Tbsp. Raw honey, local preferred
  • 1 tsp. Salt
  • 1 tsp. Baking soda
  • Coconut oil for cooking

Sourdough Eggs Benedict ingredient list

  • 12 Eggs
  • 1/2 Cream
  • 1 Cup Milk
  • 1 tsp. Garlic powder
  • 1 tsp. Salt, Sea Salt preferred
  • Fresh cracked pepper
  • 1/4 tsp. Smoked Paprika
  • 4 Tbsp. Grass-fed butter
  • 1 recipe of English muffins
  • 12oz. Canadian bacon, uncured preferred

Homemade Hollandaise sauce ingredient list

  • 6 Egg yolks
  • 1 Tbsp. Filtered water
  • Juice of a 1/2 of a Lemon, or 2 drops of Lemon EO
  • 1/2 Cup of grass-fed butter, salted
  • 1/8 tsp. White pepper

How to make Sourdough English muffins

The day before you want to make this recipe, feed your Sourdough starter.

After 4-8 hours, when the starter is nice and bubbly, begin making the Sourdough English muffins. Combine flour, water, and starter in a bowl. Cover with a Tea towel and allow to ferment over night, or for 4-12 hours.

The next morning, add the honey, salt, and baking soda. Mix well to be sure there are no chunks.

Heat a Cast Iron skillet over medium heat. Once heated, add Coconut oil.

Add some flour (1/4-1/2 cup) to a shallow bowl. Scoop out a wooden spoonful of English muffin dough and roll it in the flour to coat. Place the dough ball in the hot skillet to cook. Flip only once to continue cooking on the other side.

*Note: If the muffins are cooking too quickly on the outside, before the inside is fully cooked, place it in an oven safe dish at 200 degrees. Leave them to cook in the oven until fully done, then remove.

How to make Eggs Benedict skillet

Preheat oven to 375 degrees. Place skillet in the oven to preheat. Once heated, add butter to the skillet.

Cut up English muffins into 1-inch squares. Add them to the skillet. Cut Canadian bacon into cubes and add them to the skillet on top of the English muffin squares.

In a medium bowl, combine the remaining ingredients. Pour over top of the English muffin cubes and Canadian bacon.

Bake for 30 minutes, or until eggs are fully set. Remove from the oven and top with hollandaise sauce recipe.

How to make homemade Hollandaise sauce

In a medium pot, or double boiler, boil some water.

To a medium bowl add egg yolks, lemon juice or EO, white pepper, and filtered water.

Once the water in the pot is boiling, place the glass bowl over top to heat. Be sure the bowl is not touching the water in the pot. Begin whisking immediately.

In a slow and steady stream, pour in the melted butter while whisking. Continue whisking until thickened.

Turn off stove, but keep bowl on the pot to stay warm.

Top Eggs benedict skillet filling with the sauce, sprinkle with smoked Paprika, and enjoy immediately.

Eggs Benedict skillet variations

Traditional eggs benedict consists of English muffins, poached eggs, Canadian bacon, and hollandaise sauce. If you like to keep it basic, then follow the recipe as is.

Here are some of our favorite variations of this recipe, for you to try:

  • Replace the Canadian bacon with regular bacon
  • Replace the Canadian bacon with crab
  • Top with freshly sliced avocado
  • Add a layer or homemade hash browns to the bottom
  • Add a little bit of tomato paste to the hollandaise sauce

Instructions
 

How to make Einkorn Sourdough English Muffins

  • To a medium bowl, add flour, water, and starter. Mix just until combined.
  • Cover bowl with beeswax wrap or plastic wrap and allow to ferment overnight, or until doubled, about 4-12 hours.
  • Remove wrap, add remaining ingredients and mix with a wooden spoon just until combined.
  • Heat a skillet over medium heat. Once heated, add about 1 Tbsp. of Coconut oil for cooking.
  • In a shallow dish, add some flour, about ¼ cup.
    Scoop out a wooden spoonful of the dough, roll in flour, and add to the hot skillet to cook. Repeat with remaining dough.
  • Flip after a couple of minutes to cook the other side, only flipping once. If the outside is cooking before the inside is fully cooked, transfer muffins to an oven safe dish. Place in the oven at 200 degrees to finish cooking.

How to make Eggs Benedict filling

  • Preheat oven to 375 degrees. Place a Cast Iron skillet in the oven to preheat.
  • Once preheated, add 4 Tbsp. butter to the skillet to melt.
  • Meanwhile, cut up English muffins into 1-inch squares.
  • Once the butter has melted, add the muffin cubes to the skillet.
  • Chop Canadian bacon into small cubes and add to the skillet.
  • In a medium bowl, combine remaining Eggs Benedict filling ingredients.
  • Pour the egg mixture over the English muffin cubes and Canadian bacon in the skillet.
  • Bake for 30 minutes.

How to make homemade Hollandaise sauce

  • Boil some water in a small or medium Stainless Steel pot.
  • In a medium bowl, combine egg yolks, lemon juice or EO, white pepper, and filtered water. Whisk until combined.
  • Melt the butter.
  • Place the medium bowl with yolk mixture over the pot of boiling water. Whisk constantly as you slowly pour in the melted butter.
  • Whisk until thickened.
  • Turn off stove but keep the bowl over the pot to keep the Hollandaise sauce warm.
  • Pour over cooked Eggs Benedict skillet filling and top with Smoked Paprika.
  • Enjoy immediately.
